How They Work
These new type of ovens came into the US in the late 1970s. It had already been popular in Europe even before it came to the States because of the fact that these ovens are not only able to reduce cooking time, but are also able to cook food evenly. Standard ovens usually have heating mechanism at the bottom, and a few also have another one on top for broiling purposes. The difference with convection ovens is that they have a high temperature fan inside the heating area which allows heated air to circulate inside the countertop convection oven itself. Because of the fan, heat inside the oven is distributed evenly.
Evenly-Cooked Food
These types of ovens usually have three separate heating elements – one on the top, bottom, and rear sections of the heating area. This means that the whole area is heated at the same level and thus, there are no cold or hot spots in your food. In traditional ovens, problems may occur when cooking in multiple layers. Say you're baking three pans of muffins all at the same time. The radiant best convection oven will be able to cook the first layer or pan properly but the heat might not be able to penetrate the other two layers in such a way that all three pans are cooked evenly. With convections this is never going to be a problem as the equally-distributed heat will cook all three pans evenly.
Save on Time and Money
One of the reasons why a lot of people tend to buy convection ovens is because of its ability to greatly reduce cooking time and cost. The "rule of 25s" for these ovens means it is able to reduce heating temperature by 25 percent while allowing cooking time to improve by 25 percent. Although these ovens are more expensive than its radiant counterpart, you will see that in the long run that you are actually able to save more. Not only are you able to save in heat energy, but you are also given the luxury of more time to spare.
